Mexican Grilled Corn

This is one of those wonderful dishes that you can actually adjust however you choose to. I don’t always use fresh corn, sometimes I use frozen corn on the cob. Also I don’t put the chili powder on mine (I do Edgar’s) because I can’t have things that are super hot. My poor little stomach just can’t handle that. For my mom I cut her’s off the cob but it is still just as great. This is something I will be making a lot come spring and summer. I may even do some this weekend.

I recently told you all how soybean oil is not only one of the versatile ingredients you can use but that nearly all oil labeled vegetable is actually soybean oil! Isn’t that crazy? I didn’t believe it at first either but I checked my oil and there it was in black and white. I also made a point of checking when I was in the grocery store and it is true! This actually makes me feel better because soybean oil is better for your health. Well I have been learning more and more about soybean through the United Soybean Board’s Soy Connection website and I have discovered they have some great recipes. I want to share with you the 5 that I want to try out the most!

A few years ago I wanted to include more traditions from my husband’s culture into our holiday. Since I was just learning to make Mexican dishes I didn’t want to do something that would not taste good because I didn’t know how to make it. I thought about what I could make for Posadas which begins on December 16th and continues for 9 days in celebration of the journey to Bethlehem. I began talking to my mother in-law about Posadas recipes and what I could do. She told me to start my own tradition by making something I wanted.
