I love watching British movies and one of my favorite things about them is tea time. Every so often Victoria, my oldest daughter, and I have our own Afternoon Tea with Scones. There is just something about sitting down to tea time that feels so decadent. I’ve always wondered why it was something that Americans don’t do. On days that we do enjoy afternoon tea, we have less stress and are not starving by dinner time.
I think we are just so busy all of the time that we don’t take the time to slow down and enjoy the little things. Here is my best recipes for scones. Serve it with whatever tea you prefer in your best china of course. I prefer English Breakfast Tea with mine. When they are done just break open, spread on some clotted cream, and add a dab of jam on top. (If you don’t feel like making clotted cream, just whip some heavy cream until thick.)

- 2 cups Flour preferably cake flour
- 2 tsp Baking Powder
- 1/2 tsp Salt
- 4 tbsp Butter cold
- 1/4 cup Sugar 1/3 cup Sugar if you don’t plan on eating them with jam and cream
- 1/2 cup Milk
Instructions
- Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
- Sift the flour, baking powder and salt into a bowl.
- Rub in the butter until the mixture resembles fine breadcrumbs.
- Stir in the sugar and enough milk to mix to a soft dough (but not wet or overly sticky).
- Turn onto a floured surface, knead lightly (don’t over mix) and roll out to a 1 1/2-inch thickness.
- Cut into 2-inch rounds and place on the prepared baking sheet. (You can also gently form some balls in your hands and place on baking sheet.
- )Position rack high in the oven and Bake at 425 degrees F (220 degrees C) for 10-15 minutes then cool on a wire rack.

The scones I’ve had tend to be on the drier side, but with a great jam or some sort of cream, it’s absolutely delicious.

I’ve always loved Britain and their tea time. I’ve never had scones but the recipe looks so simple! Now I must try making some. 🙂

These look great. My scone recipe is a little drier then I would like. I love fresh scones with strawberry jam. Yum.
