5 Dishes for Your Summer BBQ

Since today is the 4th of July and I know that everyone will out barbecuing I thought I would share with you 5 Dishes for Your Summer BBQ from my recipe collection. These are dishes that I really enjoy and they work wonderfully in this warm weather.

5 Dishes for Your Summer BBQ

Each of the numbers below correspond to the images in the pictures so you can see what you are making.  Clicking the link will take you to my recipe for each one. ENJOY!

1.)  Mexican Salsa: This is the perfect appetizer! We love it because it is fresh and light. If you are looking for something different as a meat topping this is perfect as well. You can pair it with chicken or pork easily.

2.) Zesty Grilled Pork Chops: Pork chops on the grill…. Need I really say more. These are the perfect summer dish because you get a little spice with all the goodness of grilled meats.

3.) Mexican Potato Salad: I love this potato salad! It is different from most of the store brands and is light. I usually make it the day before because the longer it is allowed to chill the better it is.

4.) Mexican Grilled Corn: A BBQ is not complete without corn on the cob. This version is great because it adds  heat to the sweetness of the corn. However if chili powder is not for you then you can simply omit it.

5.) Avocado Ice Cream: I love having ice cream in the summer because it is that perfect cold treat. Avocado ice cream is different from what we normally have which means it is more of treat. This is light and the perfect end to a perfect day.

    MMMM they all look so good! I really like the way that potato salad sounds though! My family is all about the potatoes! I still haven’t tried the corn and that is on my list of things to make.

    Gee thanks for taking the time to share these wonderful recipes today. I have gotten some great ideas for what to do with my corn on the cob today! I am making Pork chops today and I like them zesty!

    This meal would put my hubby into a dead faint if I made it for him! My son too! I am especially intrigued by the potato salad recipe as I have never heard of Mexican Potato Salad before. I am going to that link next. Thanks so much for the recipes and Happy 4th!

    I have never had avocado ice cream before, this sounds interesting to me. I love your potato salad recipe minus the bell peppers because I’m allergic. Hope you had a wonderful 4th of July.

    Yumm! All of these sound delicious! I love Avocados but have never had Avocado Icecream. The Potato salad is a nice change from what I’m used to making. I’m excited to try these

    These sound delicious we have another cookout coming up in a couple weeks I will have to try out the ice cream and potato salad one or both possibly the corn as well if we can get some fresh from the farmers market. Thanks so much for the recipes!

    I know even less about avocados than you once did. I know I liked the taste. I didn’t know that Mexico has the only natural-blooming avocado tress either. I never heard of avocado ice cream, but why not? Anything called ice cream can’t be anything but delicious and satisfying.

    I would love to try the Mexican Potato Salad, I love the extra pepper, cumin, yum! Also, I’ve made many different ice creams, but haven’t tried making avocado yet – it looks soo good! I’m so excited that we’re coming into barbecue time!!!
