I will admit that I am a bit late to the quiche world and that my sister in-law turned me on to them. They are rather easy and I have no idea why I haven’t done them before. I think for me it’s because I am not a big egg eater. However, everyone else in my home is so this is a recipe that I make a little more often than I would like.
When I make it I typically make it for breakfast or for brunch. It can be eaten for dinner but I don’t know for me it just doesn’t fit that bill. I don’t serve it with anything else since it pretty much has everything that you need in there. It would be great with mimosas though.
Bacon and Cheese Quiche

- 1 Pie Crust, softened
- 1 cup half and half
- 4 eggs
- 1/4 tsp salt
- 1/4 tsp pepper
- 8 slices cooked crispy bacon
- 1 cup cheddar cheese
- 1/4 cup Parmesan Cheese
Instructions
- Pre-heat oven to 350°F.
- Place pie crust in 9-inch glass pie dish.
- In medium bowl, mix half-and-half, eggs, salt and pepper; set aside.
- Layer bacon and cheeses into dish.
- Pour egg mixture over top.
- Bake for 40-50 minutes or until a knife comes out clean.
- Let stand for 5 minutes and then serve!
Although I do admit that I just have a glass of orange juice with it when we have it. One of the best things about quiches is that you can adjust it easily. If you wanted a some greens in here you could easily add some spinach. If bacon isn’t your thing, then do sausage or maybe ham. Make it your own and enjoy!
