It is time for another Tasty Tuesday where you will find anything from a recipe to tips on washing dishes! Just kidding cause, I hate to wash dishes and will get out of it if I possibly can and do most nights! In fact we have a rule at my house. If you cook you don’t have to clean and it has served me well. Although I will tell you that on the nights that Ma prepares dinner we end up using paper plates. She may have the right idea! I don’t know about all of you but I love food and everything to do with food including all the gadgets in the kitchen. Some of my fondest memories of my Granny as well as a great aunt are of being in the kitchen together. My granny was a difficult woman but for some reason she took the time to teach me how to cook and encouraged my love of food (well the making of it not the eating it.) Nice and Buttery
I think I may have actually shared this chicken with you in the past but I did it differently this time and wanted to share it with you again. This is one of those dishes that I pull out when I want to impress someone and that doesn’t take a lot of effort. Prior to my air fryer I did these in the oven and they took roughly 45 minutes to an hour.

I will make sure that I let you know that in the recipe below. However if you have an air fryer or the chance to use one I would highly recommend it. That baby will save so much time.
The last time I shared this I told you to use chicken breast and you still can. However, I have switched to using chicken tenders that my local store carries. They are made from breasts and boneless. They are also much easier to handle and deal with. I use six packs (about a pound and a half each pack) which will feed a family of seven. It figures up to roughly three tenders each which is more than enough for us with everything else. Now if your store offers family pack sizes then I would suggest you use a couple of them. You know how much your family will or won’t eat.
I take the chicken and rinse it off then pat it dry with a couple of paper towels.
While the chicken is drying on the paper towels I add some eggs and milk into one bowl. Whisk those babies together until the are blended well.
In another I crunch up some buttery crackers like Ritz. You can use any brand but I would not suggest using a saltine cracker. They don’t give you that buttery flavor that you are looking for. Another thing is I don’t bother to salt the chicken before hand because the crackers can be super salty sometimes.
Drop the chicken tenders into the liquid mix. I actually just drop them all in and push them down. That way they get good and soaked which is what you want.
Roll each chicken tender in the crackers making sure that you coat each side well. If the crackers are acting like they don’t want to stick dip the chicken back into the liquid for a second and try again.
Line up the chicken on a pan and bake at 350 degrees until the chicken is done. I used my air fryer and did it in three batches which took 18 minutes each batch. While the chicken was cooking I made everything else including homemade mashed potatoes and gravy.
Ingredients
- 6 pounds chicken breast tenders
- 3 packs buttery crackers
- 1 cup milk
- 5 large eggs
Instructions
- Rinse and dry chicken with paper towel. Salt and pepper if desired.Whisk eggs and milk together in large bowl. Crush crackers in a separate large bowl or shallow pan.Add chicken to liquid mix and push down to soak the chicken.Roll each tender in the crushed crackers until completely covered. Place tenders on pan and bake in 350 degree oven until chicken is done.
Recipe Notes
You can use boneless chicken breast if you wish. I would suggest 1 breast per person and adjust recipe as needed.
