Right now go to your pantry and check your oil, don’t worry I will wait while you do it…….. what are some of the ingredients? I bet, like mine, it has soy or soybean oil in there didn’t it? I typically buy the Great Value at Wal-Mart because it is the cheapest and I buy the biggest thing available but when I checked the label I found Soy! I was so surprised.
Did you know that Soybean oil is very good for you and that it is already in many oils that you most likely already use? Did you also know that Soybean oil has many benefits such as:
- Contains 0g trans fat per serving
- Serves as a principal source of omega-3s which can help reduce blood pressure and prevent heart disease
- Great source of vitamin E which prevents cell damage that may lead to diseases such as cancer and heart disease
- Contains unsaturated fats and when it replaces saturated fats, it may lower cholesterol levels
I told you I had a recipe, well United Soybean sent this great little cookbook and I wanted to make something that was keeping with the season a bit so I made Creamy Pumpkin Soup. I was nervous about cooking with soy but I must say that it was very easy and the soup tasted fabulously! At first I thought how is the Soybean oil going to cook but then remembered that I have been using it for a while since it is already in my Vegetable oil. The other thing was how the tofu was going to taste. Honestly it had a peanutty, meaty sort of taste and texture to it.
Ingredients:
- 1 tablespoon Soybean oil
- 1 Small onion, diced
- 16 ounces silken tofu
- 15 ounces Pumpkin puree (1 can)
- 1 Medium apple, peeled, cored and sliced
- 2 cups Low sodium vegetable or chicken broth
- 1 teaspoon Curry powder
- 3/4 teaspoon Ground black pepper
- 3/4 teaspoon salt
- 1/4 cup Toasted pumpkin seads (optional)
Directions
1 Heat soybean oil in medium saucepan over medium heat. Add onions and cook for 2 to 3 minutes until soft.
2 Place onions, tofu, pumpkin, apple, broth, curry powder, pepper and salt in blender. Puree for 1 minute until smooth.
3 Return mixture to saucepan. Heat over medium heat, stirring occasionally, until soup begins to gently simmer. Do not boil. Ladle into bowls; top with pumpkin seeds, if desired.

I was so suprised to learn that Walmart’s vegetable oil is made of soy. I will be getting it! Soy is a healthy oil, and I would use it in my wok to make Chicken Chow mein!
