Today was the last day of public school here and tonight many of the kids will be graduating. None of mine are of course but we have friends who have kids walking across that stage tonight or over the weekend. Graduation around usually means that people we be coming over or we will be heading to someone else’s home.
Of course as you all already know this weekend for us will mean having people over after the funeral so we will be terribly busy. It also means that I will be preparing all of the food. One thing that will be on the table is cheese! Speaking of cheese, did you know that California is the number one dairy state in the United States. California produces more milk, butter, and ice cream than any other state. It is also the second largest cheese producer. I didn’t know it but California produces more than 25 varieties of Hispanic-style cheeses which of course bears the Real California Cheese seal. This seal certifies that the cheese is made in California with California milk. You can learn more by visiting the California Milk Advisory Board.
I mean who doesn’t love cheese? I bet there are some great recipes out in California for cheese too but we are in the South so I will be making the famous Cheesy Vidalia Dip. This dip gets asked for lot and I have adjusted the recipe many times. This is the bsic verison but I have added things such as spinach or broccoli in the past. Just go wild with it and enjoy!
Cheesy Vidalia Dip
Ingredients
- 3 cups freshly shredded cheese (use what kind you like! I use a blend of different cheeses)
- 4 ounces cream cheese, cubed
- 2-3 small Vidalia, diced ( you may have to look for these, ask your grocer or substitute another sweet onion)
- 1/2 cup mayonnaise ( I use salad dressing instead of mayo)
Instructions
- Place cubed cream cheese in large mixing bowl and microwave for thirty seconds, just until soft.
- Add diced onion, cheeses, and mayo to mixing bowl with cream cheese. Stir to combine.
- Spoon into greased baking dish (I use a small dish but you can use whatever you have that is small enough)
- Bake at 375 for 25-30 minutes, or until top is bubbly and lightly browned.

I love cheese, along with dairy in general, so this dip is something I will try. I always look for the California seal, that way I know it’s good (I do get Tillamook cheddar though, which is Oregon cheese- there’s nothing like it!) Since I’m nowhere near the south, I can more easily get Walla Walla sweet onions to substitute for the Vidalias. This looks super yummy and a lot like comfort food, since it doesn’t skimp on richness. Thanks for the recipe!

I love cheese and I love Vidalia onions! But I never thought to make a dip like this! And I know cream cheese is just making it creamier and mayo? Never thought mayo in a cooked dip would appeal but I can see it would in this one! Thank you for the recipe! Just in time for football season!

I didn’t think I was a big fan of cheese dips. However, my wife and I just got a pimiento cheese dip from one of our favorite local restaurants and it was delicious! The kind I had used smoked gouda for the cheese and I’m a big smoked flavor fan.

Adding the cream cheese is what stands out for me. I’ve not seen this in a recipe like this before. I have two things of cream cheese in the refrigerator, and I think this is a great way to put them to use. Glad I caught this recipe, thanks.
