Friday has rolled around again,which means it is time for Friday Cocktails! The weather has changed and now we are ready for those beverages that keep you warm. I am thrilled it is finally no longer hotter than Satan’s toenail out there. As a woman going through menopause the summer was rough!
This week has been mostly about work for me. Marianne Wolfe, one of the authors I work with, has a new release and I have just been getting things done there. On top of my regular work here. One thing I am doing a little more is making sure I get outside and away from the computer. We did have three trees fall in the front yard this week though. It took some time and a lot of work but we got them cut down and moved.
This Week’s Cocktail
Are you ready for an Irish Coffee? When I drank coffee this was one of my favorite drinks. It was created in the winter of 1943 by Joe Sheridan, chef at Foynes Port near Limerick, Ireland. Now my drink isn’t the original as I like mine a little modernized.
Ingredients
- 16 oz. hot water
- 2 tsp. light brown sugar
- 1 c. brewed coffee
- 2 oz. Irish whiskey (such as Jameson)
- 1/2 c. heavy cream for topping
- Chocolate shavings, for garnish
Directions
- Fill 2 mugs with hot water and let sit 2 minutes. Pour out water and add 1 teaspoon light brown sugar to each mug. Pour over hot coffee and stir to dissolve sugar, then pour in whiskey.
- In a separate bowl with an electric mixer or by hand, whisk cream until soft peaks form. Cream should be thick but still pourable. Top coffee with cream by gently pouring over the back of a warm spoon to form a thick layer on top of coffee. Garnish with chocolate shavings.
