Any time we have a birthday party or any other event where there may be children I always make sure that I include some desserts for those who may have allergies. These Gluten Free Peanut Butter Cookies are perfect for those who have gluten allergies however if you have someone who peanut allergies because they do have peanut butter in them. One great idea is to be sure you have labels so those with allergies know what food is for them. When I do little snack boxes I label them with the kids names so each child gets what they are suppose to get.
Having this sort of food available just makes things easier on the parents and the kids as well. No child wants to go to a party where they don’t get to have a snack. They are pretty simple and you can add in other things like chocolate chips if you wanted. Just be sure whatever you add works well with the allergy idea of these.
- 1/2 cup gluten free, casein free margarine
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 1 egg
- 1/2 cup salted natural peanut butter
- 1/2 teaspoon baking soda
- 1 cup soy flour
- 1/4 cup tapioca flour
- 1/4 cup potato flour
- Preheat the oven to 375 degrees F (190 degrees C).
- In a medium bowl, cream together the margarine, brown sugar and white sugar until smooth. Mix in the egg and peanut butter. Combine the baking soda, soy flour, tapioca flour and potato flour; stir into the batter to form a dough. Roll teaspoonfuls of dough into balls and place them 2 inches apart onto ungreased baking sheets.
- Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

I love a good peanut butter cookie and, while I’m not gluten free, I do limit exposure for health reasons. I will try this for sure!

My nephew has gluten allergies so this is perfect to make when he comes over. And my favorite cookie is peanut butter. I love them soft and crispy around the edges. Just need a glass of milk and im good to go.
