Mac and Cheese is a Meal

Growing up my mother would have never served us only macaroni and cheese. When I was in college I ate it a lot as a meal because it was cheap, however once I was older and earning a decent living I rarely served it. It was simply something that I didn’t eat as much because I had eaten so much.  It is one of the few foods that I will NOT purchase a store or off brand in. I always buy either Kraft or Velveeta because I love those the most.

Now as a mother a huge part if me says that I need to serve good wholesome meals to my children. However I occasionally serve just Mac and Cheese. In my defense it is all they want, including my mother, who is more like another child. They get so excited to have a big bowl of the pasta and they all eat everything that night. There is never any complaining or fuss. They sit at the table and eat. Now I don’t serve this to them often just every once in a while when I am super busy and the day has gotten away from me. Or on a day when they specifically ask if that is what they can have for dinner. I do try to give them some fruit with it so I feel less like the worst mother in the world.

Mac and Cheese is a meal, I mean I am not a bad mother, am I ?

    My very favorite meal when I was a kid was mac and cheese and a piece of bread with butter and grape jelly.
