I love cookies! It’s the truth, I just can’t seem to help myself. The biggest problem though is that as much as I love cookies I hate store-bought ones but don’t have the time to bake them from scratch very often. That is where May Cookie Co. comes in. May Cookie Co. was started by Susan Nolte in 2008. Susan’s idea of all natural, bake-at-home cookie mixes has a unique focus on healthy eating. That’s right I said cookie and healthy in the same sentence. In may 2010 her daughter, Marissa, joined her in the company and together they are working diligently to achieve their goal.
I was sent three cookie mixes (Triple Chocolate Oatmeal, Rich & Chewy Chocolate Chocolate Chip, and Hearty & Wholesome Oatmeal Cranberry) to try out and I will say that this is a very unique concept. What you get is all of the dry ingredients and you have to add the wet stuff in. Everything is in its own little package inside the box and mixing it all together is a breeze. In fact I didn’t realize how much of baking was just getting the ingredients together and measuring out the dry stuff.
As you can see in the above pictures it was very easy to make the cookies, so easy that there aren’t pictures of the finished ones. They mysteriously disappeared as they came out of the oven and of course no one saw a thing. I really loved how healthy they are. There is very little sugar in them and they are richly textured. These are cookies that I can be very happy giving to my family and I feel good because I made them. Somehow everything tastes better when you make it.
