In Menu Monday we usually tell you what it is that we have planned on our menu for the week. It is part of a link up with Crossroads Media Hub and one that we all really like. However I haven’t been doing it in the last couple of weeks because I honestly never know what we are going to have from day-to-day. I try to plan out a week’s worth of meals but the truth is I am a bit more passionate about food and cook whatever it is that I feel for that day.
It changes from day-to-day and I have found that if I try to stick to a meal plan I end up making the same things over and over again. So I thought I would share with you the recipes and/or articles that will be coming up this week here are BiCultural Kitchen. That way you will know what to expect and there may be something that you want to watch for. This week I will be writing about:
- Working with Fresh Chilies
- Wordless Wednesday
- Banana Pecan Cake
- Easy Enchilada Sauce
I live in a small Georgia town that you most likely have never heard of and I LOVE it! My house is more than full as I am a single mother of four & caregiver to my aging mother and uncle. Lover of all things Outlander. Goes to the beat of her own drum woman.

I am interested to hear about your enchilada sauce, most of the ones from a can have MSG. I am really curious if it is a lot of work.
Rita says
It isn’t and I think that you are really going to like it.

Ya know, I have been saying I am going to do this and need to put in in action. I too get so tired of the same meals and need to get busy, make my weekly grocery list and different meals ahead. Glad you shared this, I think you motivated me too
Rita says
I am so glad! I just fall into a rut whenever I make a plan because I like to be a free spirit but I know a lot of people that do make a list and stick to it.

I have the same problem. If I try to do a menu for the week it just seems we eat the same things over and over or else something will come up at the last minute and throw off my whole menu. It always seems to be the worst during the summer. I can’t wait for your Banana Pecan Cake. Yum!!
Rita says
It is worst in the summer for me as well. I always think it is too hot to do a ton of cooking so we end up eating a lot of sandwiches.
Jean says
I look forward to the fresh chilies post. I always burn myself with jalapenos and don’t know how to use anything else.
Rita says
I did when I first started using them as well. Putting a plastic bag over your hands really helps keep you from getting anything on your hands and then burning your eyes or nose later.

i don’t think i could plan a week’s worth of meals either because my tastes change and i would be modifying it all the time as well.
