Mexican Grilled Corn

This was one of my most popular posts back in 2013. Everyone loved this corn and I thought I would reshare it for those who never got to see it the first time. I still make this from time to time during the summer. It is a huge hit at summer barbecues.

This is one of those wonderful dishes that you can actually adjust however you choose to. I don’t always use fresh corn, sometimes I use frozen corn on the cob. Also I don’t put the chili powder on mine because I can’t have things that are super hot. My poor little stomach just can’t handle that. For my mom I cut her’s off the cob but it is still just as great.

Ingredients

  • 6 ears corn, shucked and cleaned
  • 1/2 c. crema
  • Chili powder
  • 1/3 c. Grated cotija cheese
  • Freshly chopped cilantro
  • Lime wedges, for serving

Directions

  1. Prheat grill or grill pan to medium-high. Grill corn, turning often, until slightly charred all over, about 10 minutes. 
  2. Brush corn with a layer of mayonnaise and sprinkle with chili powder, cotija, and cilantro. Serve warm with lime wedges.

Recipe Notes

  • You can substitute mayonnaise for the crema.

    This is right up my alley. I’ve had corn prepared similar to this but never tired it at home. I will definitely have to try this.

    This sounds absolutely to die for!!! I can’t wait to try it. I think I will use regular Mayo rather than Miracle Whip…that’s just me 🙂

      Edgar likes regular Mayo as well. I just love Miracle Whip and it works for me because I don’t add the chili powder to mine.

    I LOVE this recipe, it is slightly different (miracle Whip and hers was SPICY ) than what my neighbor used to make when I was growing up… she would bring it to BBQ’s and it was always a huge hit! I think I will try it at home since it has been years since I have had some!

    I’ve never tried this before. My grandma used to grill corn for me but we didn’t add any additional sauce or smt. Looks really good though and I am thinking of trying this when I can get my hands on some corn

    I am so boring when it comes to corn on the cob–I always boil it. But this looks delicious–I think I will be trying my hand at grilled corn now.

    This looks so good. It reminds me of the fair corn up home. My only issue is mayo. Seriously detest the stuff. We pull the husk down and yank out strings leaving leaves on slap butter on our and than pull back up the husk and throw it on the smoker. lol than they sprinkle this great seasoning, it so good i think the main ingredient must be crack… I miss that corn lol

      You can leave off the Mayo and use Crema. It is different and you can find it in the Latino section of your grocers cold section

    My daughter makes her corn very similar to this ever since having it in California that way. I have not yet tried. This one is a bit different, I may have to give it a try. I will pass this on to her she make it as well.

    Thank you for sharing this recipe – and yes, unfortunately we are probably done grilling for the year. We do roast veggies and if I found corn on the cob in the fall, it has roasted up nicely in the oven. This summer has been hit and miss for finding good corn on the cob even in the local market. There is a huge local farmers market this weekend and I hope to try your recipe.

    I have never eaten corn with a Mexican twist. I am very fond os hot food and wouldn’t mind at all trying this recipe out. I doubt, however if too many family members will try it. I’ll be happy to be the only brave one in the family. Their loss.

    That sounds delicious. The most unique way I’ve done it is to put some jalapeno butter on the corn. Your recipe sounds delicious and with more layers of flavor.

    The Grilled Mexican Corn looks so good we love doing different items on them too. I like the cheeses and the Crema on mine its always so good. It’s fun when everyone gets together and samples everyone’s special creations they have come up with too when we bbq.
