Mexican Potato Salad

I posted this recipe back in 2011 and it was one of the first Mexican dishes that I had made. It took a lot of adjusting for me to get it right since the original recipe that was given to me was far to hot and spicy for my tastes. It felt like my mouth was on fire. In fact you will see where I explain why I make two bowls below. Now when I make it I only make one unless someone asks for the spicier version.

I love potato salad and we make a ton of it in the summer time. This is my Mexican version which I have adjusted to my tastes. I always add more of the spices to another bowl for my hubby. He loves his hot so adjust it however you need to to suit your tastes. I make mine the night before so the flavor have plenty of time to blend.

Ingredients:

  • 3 lbs small red potatoes, quartered
  • 1/2 cup chopped celery
  • 1/2 cup chopped green pepper
  • 1/2 cup chopped onion
  • 1 cup frozen corn, thawed
  • 2/3 cup mayonnaise or 2/3 cup salad dressing whichever you prefer
  • 1/4 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1 tablespoon cilantro
  • 1/2 cup roasted jalapeno peppers
  •  1 tbsp mustard. ( I add this simply because I grew up with mustard potato and it’s look thing with me)
  •  3 boiled eggs, chopped.

Directions :

    null
  • Cook potatoes in boiling water 10-12 minutes or until fork-tender; drain; rinse with cold water; drain well.

    I am a potato salad fiend, but it can’t be just any potato salad. I don’t like Mayo, it has to be Miracle Whip lol. This sounds pretty yummy.

    I’m always experimenting and adding and subtracting ingredients when in comes to egg salad and potato salad and deviled eggs. This looks great! I started adding jalapeno peppers to my deviled eggs with bacon and people love them! Thank you

    Now that summer is upon us, I like to make many types of salads over the spring and summer. This potato salad sounds delicious. I always love to have a little zing to my food. I am going to have to try this.
