In 2012 this was a recipe that was always in my fridge. It is something I still make but since we don’t have it for every single meal anymore I only make a coupe times a month. My uncle loves salsa and chips so I make him up a batch whenever he asks.
Salsa is all about what you like in it. if you don’t like onions or peppers just leave them out. There are few rules when it comes to how you eat or make your salsa. Make what you like! These are best with corn chips. I usually order extra when we go to the Mexican restaurant if I know I will be making this salsa. I heat the chips up before serving in the microwave for a minute. Just watch them. You want them warm, not burnt.
Ingredients
- 5 roma (plum)
- 3 serrano peppers
- 1/2 cup chopped onion
- 2/3 cup chopped fresh cilantro
- 1 clove garlic, peeled and crushed
- salt to taste
Directions
- Place roma (plum) tomatoes and serrano peppers in a medium saucepan over medium high heat with enough water to cover.
- Bring to a boil. Boil 15 minutes. Remove from heat and drain.
- Place roma tomatoes, serrano peppers, onion, cilantro and garlic in a blender or food processor.
- Puree about 30 seconds, or to desired consistency.
- Transfer to a medium serving bowl, and salt to taste.

I love salsa too and make it much the same minus the cilantro. I dont know what it is about that herb, but I never have had a real good relationship with it 🙂 We love salsa the best when everything is right out of the garden- can;t wait!

Have you tried parsley instead? They are almost the same

This looks great – I love that you actually cook the tomatoes. My salsa never seems to get the consistency that I like, and then gets too watery. Sigh.
Let’s hope I have better luck with yours! 🙂

I love this recipe. Nice and basic. I am not a huge fan of Mango salsa or a bunch of crazy stuff in there. My kids won’t touch it if I put into much as they call it “weird” stuff. Thanks!
