I thought I would take a little time each Monday morning and share something fun with you. It could be a simple little story about something that happened or maybe just a picture. Just a little something that will help make the week begin a little bit brighter and on a better note. Mondays are extremely busy for me and I always feel like I am drowning on that day of the week.
Not to mention that I can only have 1 cup of coffee a week now and I have chosen to have it on the day that I need it the most. I had to cut back drastically because of my blood pressure and blood sugar. So sit back and (I hope that you will) enjoy these little posts each week.

I live in a small Georgia town that you most likely have never heard of and I LOVE it! My house is more than full as I am a single mother of four & caregiver to my aging mother and uncle. Lover of all things Outlander. Goes to the beat of her own drum woman.

Rita, what an uplifting day day to launch this latest project! I agree that this holiday is amazing, and appreciate it as someone who, like you, celebrates our multi-cultural country and world.
To me, the day isn’t just for flag waving. I think it’s a great holiday about independence that can inspire us all.

I’d like to sing the praises of … bitter melon.
A vegetable that I had for lunch today and, Rita, one reason is that it is renowned for helping with blood sugar. A friend taught me her way to cook it while we were together in Japan, and it’s fascinating how you can scoop out a lot of “optional bitterness” and wind up with a strangely yummy treat.
Isn’t that one of the great uses of independence? Some bitterness may be in our meal, but much of that mouth-oucher might be quite optional.

I was able to get my teen out to watch fireworks on the 4th…she had surgery on her backside and can’t sit for long periods of time. I LOVE watching fireworks!
