This week we are checking out molcajetes. A molcajete, pronounced Mole – kah – HEE – tay, is the traditional Mexican version of a mortar and pestle tool which is used to grind spices and make salsas. The term molcajete actually refers to the three-legged round bowl, which has been carved out of basalt. The pestle, which is known as the tejolote, has also been carved out of the same volcanic rock. I will say that being an American gal I really didn’t know much about using a molcajete until a few years into my marriage. I used a food processor and that was that. Let me tell you that until you have made salsa the old fashioned way you have not actually made salsa.
The Mexican lava rock one is the one I used the most for making my salsas. It is in my opinion the best one available. I have found that I use my molcajete for many different things not just Mexican dishes. If I am cooking and a recipe calls for crushed peppercorns I can throw them in, have the kids crush them while I do other things and not have to pull out a bunch of equipment. It is the tool every cook needs! You can get a plastic molcajete if you wish and they come in three colors but I use these for serving my salsa in. If you have been to a Mexican restaurant lately you may have seen these. They are very sturdy plastic and work well I just prefer the lava rock. If you are wanting to start small then plastic is the way to go.
