Pan Dulce {Mexican Sweet Rolls}

Pan Dulce are sweet rolls that can be eaten as a dessert or however you want. I split them open, butter each half, and toast them in the oven.

Ingredients

  • 3 1/2 to 4 cups all-purpose flour
  • 1 package active dry yeast
  • 1 cup milk
  • 1/4 cup sugar
  • 1/4 cup shortening
  • 1 teaspoon salt
  • 2 eggs
  • 2/3 cup all-purpose flour
  • 1/2 cup sugar
  • 1/4 cup butter or margarine
  • 2 beaten egg yolks
  • 1/4 teaspoon vanilla

Instructions

  1. In large mixer bowl combine 2 cups of the flour and the yeast.
  2. ln saucepan heat milk, the 1/4 cup sugar, shortening, and salt till warm (115° to 12O°), stirring constantly.
  3. Add to dry mixture in bowl; add whole eggs.
  4. Beat at low speed of electric mixer for 1/2 minute, scraping bowl.
  5. Beat 3 minutes at high speed.
  6. By hand stir in enough remaining flour (1 1/2 to 2 cups) to make moderately stiff dough.
  7. Knead dough on lightly floured surface 8 to 10 minutes or till smooth.
  8. Place in greased bowl; turn once to grease surface.
  9. Cover; let rise 1 to 1 1/4 hours or till double.
  10. Punch down.
  11. Divide into 16 equal pieces; shape each into a smooth ball.
  12. Roll or pat each into 3-inch circle.
  13. Place 2 inches apart on greased baking sheet.
  14. Combine the 2/3 cup flour and the 1/2 cup sugar.
  15. Cut in butter with pastry blender to make fine, even crumbs.
  16. With a fork stir in egg yolks and vanilla.
  17. Mix with hands till well blended.
  18. Divide mixture into 16 portions.
  19. With rolling pin roll each to a 3-inch circle on a lightly floured surface.
  20. With spatula transfer each to a circle of dough on baking sheet.
  21. Slash top into squares, circles, or shell forms. Cover and let rise about 30 minutes or till double.
  22. Bake in 375° oven for 15 to 18 minutes.

    I had never heard of this so I did some research and found out they have been around since the French occupation of Mexico. They look delicious and your guide shows how easy they are to make. Thank you for introducing me to Pan Dulce.

    I wonder if these are anything like the roscas my mother used to make. She is from Peru. This recipe looks yummy. Going to pin it and see if I can try to make it.
