Pecan Pie {Using Ground Pecans}

Pecan Pie

My aunt and mom love Pecan Pie but because of their dentures they really can’t eat it. My aunt recently found what she calls Pecan Meal and brought some over for me to make a pie out of. This “meal” is really nothing more than ground pecans and let me tell you they are good. the recipe for the pie is very simple.

  • 1/4 c. melted butter
  • 3 eggs, beaten
  • 1/2 cup dark corn syrup
  • 1 cup sugar
  • 1 tsp vanilla
  • 1 cup pecans

Mix everything together (expect pecans) making sure to mix well. Mix in pecans then pour into shell. Bake for 45-60 minutes. I should tell you that I used vanilla bean paste and add 1 1/2 cup pecan meal. They are simply heavenly!

    *pinned* This sounds delicious! I love the addition of vanilla paste. I am making my own vanilla extract and experimenting with vanilla bean paste. Yum!

    Sounds amazing i love pecan pie, but maybe the kids will now eat it because there aren’t huge chunks of pecan on top. Great recipe!

    I like the idea of this… although my husband has dentures and can eat pecans, this makes a lot of sense and would make for a very smooth pie. I would suppose the ‘meal’ would be pretty easy to make yourself with a blender!

    This sounds really interesting. I am not a fan of traditional pecan pie, mostly because of the texture. I will have to try this, because my Southern husband loves it!

    I think I am going to try this, I have always been afraid to make a pecan pie because I know it can come out runny if it is not done right. But this looks simple enough. And I am a HUGE fan of pecans! I wonder if I can make my own pecan meal or if I should make a trip to a whole foods store to find it.

    absolutely in love with pecan pie! Every thanksgiving we have some of its yummy-ness! In a family of women who love to cook we have never made a pie, cakes yes but no pie so i am very glad to have found a simple recipe that sounds easy and will hopefully come out delicious!

    This sounds really good! I don’t have dentures, but that doesn’t matter – it still sounds delicious. My mother’s side of my family is from the Southern US, and pecan pie is a big deal there. I live in Canada, but I like the idea of making this, as it brings back memories of North Carolina, which I miss very much.

    i never knew that pecan pie was so simple. I def prefer the ground pecans over how Ive seen others make it. Ive never heard of Pecan mill so I would just ground my own, even then this pie would still be so easy to make! i bet it does taste heavenly !
