If you have followed me over at Rita Reviews you know that I shared a Grilled Mexican Corn recipe that was a huge hit! I still make that and everyone loves it. My mother though can’t eat it and so I make her roasted corn. This can be done on the grill, in the oven, or on top of the stove. It does have butter and I use real butter not the stuff in a tub. Also don’t let you kids help you put the butter in or you will end up with the amount you see in the pics. Good thin no one was going to eat this!
However after I did this recipe I thought I really needed to make it more healthy and tried it with different oils. Canola and Olive are the best to use instead of the butter. Although I will tell you that nothing tastes better than real butter and if you are careful enough with it you can get away with using it. There really are no measurements in this recipe!
All you do is take your frozen corn (you can use canned but it doesn’t taste as well) and put it into the frying pan. Add your oil and turn the heat on low. You want enough oil to coat the corn and that is all. Ma doesn’t like a lot of spices so I stick with a little salt for her. You can add any spices and seasonings that you want. Stir and cook until your cook browns. It has the most amazing flavor ever!
