Back in 2019 I shared my Roasted Potatoes Recipe. It one of my go-to side dishes that everyone loves. They are super easy and I thought I would share it again with you. I keep this pretty easy although I so sometimes add chives or parsley cut up on the top. I have adjusted the recipe from my original one over the last few years and this one is by far better. Everyone thinks that I work so hard making these. Peeling the potatoes is the most work I do.
Roasted Potatoes
- 10 medium potatoes,peeled diced into cubes
- 1 stick of butter
- Meat Seasoning of some sort (chicken and poultry is great)
- Preheat oven to 400
- Grease medium baking dish
In large bowl sprinkle seasoning onto potatoes. Just eyeball it. Use more if you want spicy less if not. Add potatoes to baking dish. Cut butter into squares and place randomly on top of potatoes. Cover with aluminum foil . Bake for 45 minutes or until potatoes are soft.
Recipes Notes
- Use aluminum foil in the bottom of the pan to make clean easier. However, make sure you spray that foil or your potatoes will stick to it.
- If you prefer other spices, throw them in. There is no wrong or right way to make these babies.
I love making these potatoes. They are so easy and like I said it isn’t a lot of work. Make sure thought at about 40 minutes you check them. Because you are cooking them at such a high heat it can make them quick quicker. You know how your oven cooks best. So if you think you need to check them after 30 minutes then do it.
I will admit that these are not made in the summer as often as they are during other times of the year. That is simply because it makes my kitchen too hot. If someone request though I will make them in the summer. They are a favorite in the fall and spring. As I said earlier in the post feel free to add chives or parsley. The best thing about these potatoes is that you can add whatever you want on them. Cut the butter down if wish. I do that sometimes, depending on who the dish is made for.
