It’s that time of the year again and I am updating and resharing this classic recipe from 2021. Chicken soup is my comfort food anytime of the year but I admit that I make it a little more often when it is cold. It is perfect for after a day of playing out in the snow, if we manage to get any this year!
One thing about chicken soup is that everyone loves it. I don’t think I know of a person who doesn’t love unless they aren’t a fan of chicken. My older brother though who hates chicken enjoys this soup.
Simple Chicken Soup

- 3 lb chicken, whole
- 4 carrots, halved
- 4 stalks celery, halved
- 1 large onion, halved
- 1 tsp chicken bouillon granules (optional)
- water to cover
- salt and pepper to taste
Instructions
- Put the chicken, carrots, celery and onion in a large soup pot and cover with cold water. Heat and simmer, uncovered, until the chicken meat falls off of the bones (skim off foam every so often).
- Take everything out of the pot. Strain the broth. Pick the meat off of the bones and chop the carrots, celery and onion.
- Season the broth with salt, pepper and chicken bouillon to taste, if desired. Return the chicken, carrots, celery and onion to the pot, stir together, and serve.
