When the weather turns hot my children love to snack on ice cream. The problem is that ice cream is not the most healthy snack. Not to mention that all that dairy in the heat tends to upset their little tummies. So in an effort to come up with a better,lighter snacks I got to thinking about the wonderful Italian Ices I used to enjoy as a child. They were light and refreshing but I didn’t want to spend a lot of money. So I develop my own!
Ingredients:
- 1 cup hot water
- 3/4 cup sugar
- 2 tablespoons fresh lemon juice
- 3 cups sliced hulled strawberries (1 pound whole berries)
- 2 cups California Grapes (can red or green whatever color you prefer)
To Make:
- Stir first 3 ingredients in small bowl until sugar dissolves.
- Blend 3 cups strawberries and grapes in processor until smooth.
- Add sugar syrup and blend until combined.
- Pour mixture into 13x9x2-inch nonstick metal baking pan.
- Freeze until icy around edges, about 25 minutes.
- Using fork, stir icy portions into middle of pan. Freeze until mixture is frozen, stirring edges into center every 20 to 30 minutes, about 1 1/2 hours.
- Using fork, scrape granita into flaky crystals.
- Cover tightly and freeze.
- Scrape granita into bowls.

This looks really good and it would be better than most popsicles! I am incredibly lazy in the summer- another thing you can do with grapes is just freeze them on a sheet- kids love frozen grapes and they arent messy either 🙂
