Salad still has a bad reputation in some quarters as “rabbit food,” but this is hugely unfair. It’s true that plonking a few sad, soggy leaves in a bowl with a single tomato isn’t the best meal in the world, but salads are like any other dish: you get more out, the more effort you put in.
If you’re willing to explore the huge range of options available, then salads can be just as delicious as any other meal you can think of. What’s more, they can form a key part of a healthy diet, so here are a few recipe ideas to whet your appetite.

Pasta salad
If you’re not convinced that salad is right for you, why not combine it with another classic dish: pasta. You can choose whichever shape pasta you like, combine it with some grated carrot, fresh tomatoes and handful of crisp leaves, before adding a few of your favorite additions. The only thing you have to remember is to cook your pasta in advance and let it cool down before adding it to the cold ingredients, as you don’t want the pasta to wilt the salad leaves.
Quinoa salad
Quinoa is all the rage at the moment, driven by a number of health benefits. It is rich in protein, fibre, iron and a host of other nutrients. In order to make a delicious quinoa salad, cook the grains and then drain them and wait until dry. Then, transfer to a bowl with a couple of fresh herbs, like mint and parsley, along with some lemon juice and olive oil.
Once again, you can try a variety of different ingredients until you come up with a quinoa salad that suits your palate – there is no right or wrong recipe. As a starting point, adding some avocado chunks and a few edamame beans for a bit of crunch works wonderfully.
Caesar salad
Caesar salad is a classic dish and relatively easy to make too. The romaine lettuce will provide the base of the salad and toasting a few cubes of bread in the oven will provide you with some delicious croutons. However, the real start of the show is the dressing. Combine minced garlic cloves with mayonnaise, anchovies, parmesan cheese, lemon juice and mustard to create a creamy, unctuous salad dressing. Then, you simply combine all your components together in a bowl, adding some chicken if you want some extra protein.
As with any of these long-established dishes, the way that you make them stand out is by using the best quality ingredients available to you. Using a good supplier, like Boggiatto Produce, to source your salad leaves will make a huge difference to a dish like this.
Greek salad
Greek salad may be one of the simplest dishes that you can make, but that doesn’t make it any less tasty. Simply toss together some tomatoes, olives, cucumber, red onion and feta cheese, and dress with a little olive oil and oregano. Oh, and don’t forget to season – a little salt and pepper goes a long way on all salad dishes.
I live in a small Georgia town that you most likely have never heard of and I LOVE it! My house is more than full as I am a single mother of four & caregiver to my aging mother and uncle. Lover of all things Outlander. Goes to the beat of her own drum woman.

I make a green salad to have before dinner almost every night, using lettuce, cucumber, onion, tomato, and whatever else looks good at the store that week.. But now you’ve got me thinking that there’s no reason I shouldn’t change it up with a quinoa salad every now and again. I like quinoa but too often forget that I have it in the pantry. Thanks for the idea!
