If you are like me you spent the whole day away from the house doing different things. Maybe even eating a ton of food but now you will have to come home and cook for the family. That has to be the worst feeling and I know that I am planning on doing something simple and easy. Something that won’t feel as heavy and weighted down as all that junk I had today. Not to mention something that my diabetes will not send me into a coma over.

I’m doing Pasta! That’s right pasta! It’s a simple dish that will fill the kids up (cause they burn way more calories than I do) as well as help me stay on track with my diet. This is a wonderful pasta salad that I would love to say I came up with but I didn’t. I actually got form the good folks over at BUTTERBALL®. They have this app that is simply the best and I’m not just talking about turkey. We already know they know what they are doing when it comes to that particular food. This app has recipes including some amazing vegetarian ones. Add in the how-to-videos and the coupons and the app is this chica’s new favorite!

Trust me it will be your new favorite tool. Now back to that pasta, it’s called Mediterranean Turkey Pasta Salad. Doesn’t just look lovely up above there? I can tell you that it tastes just as amazing  as it looks. I actually made this early this morning before we left for the day so it would be ready for us tonight. I am certain that this will be a new favorite in our recipe box as it didn’t affect my blood sugar too badly. I have to be careful of white grains as they are full of carbohydrates which really send my levels into a tailspin.

  1. That does look really delicious! At least I’m not the only one – after a long day, it’s hard to want to cook dinner. The rest of the family comes home and rests, while I’m stuck cooking. I also try to plan a quick and easy meal on those days.

  18. I love turkey year round. I often buy turkey on sale at the holidays and have them cut them up, then freeze it that way, cooking just enough for dinner. This looks soo good. I didn’t know about this app!
