The other night I made a turkey for dinner. Not a little small one but a full fledge Thanksgiving style turkey. Why you might ask? Because I think turkey should be for anytime and not just holidays. Who came up with the “we only have certain foods in certain days” rule? Think about it outside of the holidays how many times a year do you have turkey? The answer is most likely, not that often. It is a mentality that we have and can’t seem to get away from. So I decided I would mix it up.
We didn’t have ham for Easter either. I was thinking about ribs and carrot cake for dessert. I love carrot cake and don’t have it often enough. I ended up do carrot cupcake because they were smaller and made a wonderful roast instead. I will share the cupcake recipe with you later this week. I just like to cook what I am in the mood for at the time and don’t want to think “Well I can’t have it because we have it on particular holidays” or anything like that. One can never tell what I am going to make when.
