As the days grow warmer and spring settles in, there’s nothing quite like a cold glass of lemonade to bring a little sunshine to your day. But why settle for ordinary when you can elevate it with the delicate floral notes of lavender and the natural sweetness of honey?

This Honey-Lavender Lemonade is a perfect balance of tart, sweet, and soothing. The lavender adds a light, floral touch without overpowering, and the honey makes it naturally smooth. It’s refreshing, elegant, and the perfect drink for spring gatherings, porch-sitting afternoons, or simply treating yourself.

Why You’ll Love This Lemonade

  • Naturally Sweetened – Made with honey instead of refined sugar, giving it a smoother, richer sweetness.
  • Subtly Floral – Lavender enhances the lemonade without making it taste like perfume.
  • Bright & Refreshing – The tart lemon flavor balances beautifully with the honey and lavender.
  • Perfect for Warm Days – Serve it over ice for the ultimate spring and summer refresher.

Variations & Tips

  • Berry Twist – Muddle fresh strawberries or raspberries in the bottom of each glass before pouring in the lemonade.
  • Make It Sparkling – Swap out some of the cold water for sparkling water for a fizzy version.
  • Cocktail Option – Add a splash of vodka or gin for a refreshing lavender-lemonade cocktail.
  • Use Fresh Lavender – If using fresh lavender, double the amount since it’s milder than dried.

Final Thoughts

This Honey-Lavender Lemonade is simple, elegant, and the perfect way to celebrate spring. Whether you’re sipping it on the porch, serving it at brunch, or just looking for a unique drink to brighten your day, this recipe is sure to be a hit.

Ingredients

For the lavender-honey syrup

  • 1/2 cup honey
  • 2 cups water
  • 2 tbsp culinary lavender (dried or fresh)

For the lemonade

  • 1 cup freshly squeezed lemon juice (about 4-5 lemons)
  • cups cold water
  • Ice
  • Lemon slices & lavender sprigs for garnish (optional)

Instructions

  • In a small saucepan, combine honey, water, and lavender over medium heat. Stir and bring to a gentle simmer (don’t boil—it can make the lavender taste bitter). Let it simmer for 5 minutes, then remove from heat.
  • Cover and let the lavender steep in the honey syrup for 15-20 minutes. This helps infuse the flavors without overpowering the lemonade.
  • Strain out the lavender using a fine-mesh sieve or cheesecloth, then let the syrup cool for a few minutes.
  • While the syrup cools, juice your lemons and strain out the seeds and pulp.
  • In a pitcher, combine the lemon juice, lavender-honey syrup, and 4 cups of cold water. Stir well and adjust sweetness if needed (add more honey for sweeter lemonade).
  • Fill glasses with ice and pour in the lemonade. Garnish with lemon slices and a sprig of lavender for a pretty, springtime touch.

It’s good to make sure you’ve got culinary lavender; the kind for potpourri can be overwhelming!
