With Thanksgiving happening soon I thought now would be the time to reshare this amazing apple pie recipe that I have. I know it is one that I will be using to make the single apple pie I have to . Uncle R loves it! Ma likes it okay but this year she wants a different dessert so instead of two of these babies I am only making one.

For the Pie Crust
- 2 1/2 Cup all-purpose flour
- 1 tsp salt
- 1 tsp granulated sugar
- 1 cup cold unsalted butter (2 sticks), cubed
- 6-8 tbsp ice water
For the Apple Filling
- 6 cips apples, peeled, cored, and sliced (a mix of sweet and tart varieties)
- 3/4 cup granulated sugar
- 1 tbsp lemon juice
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 2 tbsp cornstarch
Instructions
For the Pie Crust
- In a large bowl, whisk together the flour, salt, and sugar.
- Add the cold, cubed butter and use a pastry cutter or your fingers to work the butter into the dry ingredients until the mixture resembles coarse crumbs.
- Slowly add ice water, one tablespoon at a time, mixing until the dough just comes together. Be careful not to overmix.
- Divide the dough into two equal portions, shape each into a disc, wrap in plastic wrap, and refrigerate for at least 1 hour (or overnight).
For the Apple Filling
- In a large bowl, combine the sliced apples, lemon juice, sugar, cinnamon, nutmeg, and cornstarch. Toss the mixture until the apples are evenly coated
Assembly and Baking
- Preheat your oven to 425°F (220°C).
- On a floured surface, roll out one disc of dough into a 12-inch circle. Carefully transfer it to a 9-inch pie dish, pressing it into the bottom and sides.
- Pour the apple filling into the prepared pie crust.Roll out the second disc of dough into a 12-inch circle and place it over the apples. Trim any excess dough and crimp the edges to seal the pie.
- Cut a few small slits in the top crust to allow steam to escape.
- Optionally, brush the top crust with a little milk and sprinkle with sugar for a golden finish.
- Place the pie on a baking sheet (to catch any drips) and bake in the preheated oven for 45-55 minutes, or until the crust is golden brown and the filling is bubbling.
