Ingredients

For the Pie Crust

  • 2 1/2 Cup all-purpose flour
  • 1 tsp salt
  • 1 tsp granulated sugar
  • 1 cup cold unsalted butter (2 sticks), cubed
  • 6-8 tbsp ice water

For the Apple Filling

  • 6 cips apples, peeled, cored, and sliced (a mix of sweet and tart varieties)
  • 3/4 cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 2 tbsp cornstarch

Instructions

For the Pie Crust

  • In a large bowl, whisk together the flour, salt, and sugar.
  • Add the cold, cubed butter and use a pastry cutter or your fingers to work the butter into the dry ingredients until the mixture resembles coarse crumbs.
  • Slowly add ice water, one tablespoon at a time, mixing until the dough just comes together. Be careful not to overmix.
  • Divide the dough into two equal portions, shape each into a disc, wrap in plastic wrap, and refrigerate for at least 1 hour (or overnight).

For the Apple Filling

  • In a large bowl, combine the sliced apples, lemon juice, sugar, cinnamon, nutmeg, and cornstarch. Toss the mixture until the apples are evenly coated

Assembly and Baking

  • Preheat your oven to 425°F (220°C).
  • On a floured surface, roll out one disc of dough into a 12-inch circle. Carefully transfer it to a 9-inch pie dish, pressing it into the bottom and sides.
  • Pour the apple filling into the prepared pie crust.Roll out the second disc of dough into a 12-inch circle and place it over the apples. Trim any excess dough and crimp the edges to seal the pie.
  • Cut a few small slits in the top crust to allow steam to escape.
  • Optionally, brush the top crust with a little milk and sprinkle with sugar for a golden finish.
  • Place the pie on a baking sheet (to catch any drips) and bake in the preheated oven for 45-55 minutes, or until the crust is golden brown and the filling is bubbling.
  • Allow the pie to cool for a couple of hours before serving, as this will help the filling set.
