Preheat your oven to 425°F (220°C).
On a floured surface, roll out one disc of dough into a 12-inch circle. Carefully transfer it to a 9-inch pie dish, pressing it into the bottom and sides.
Pour the apple filling into the prepared pie crust.Roll out the second disc of dough into a 12-inch circle and place it over the apples. Trim any excess dough and crimp the edges to seal the pie.
Cut a few small slits in the top crust to allow steam to escape.
Optionally, brush the top crust with a little milk and sprinkle with sugar for a golden finish.
Place the pie on a baking sheet (to catch any drips) and bake in the preheated oven for 45-55 minutes, or until the crust is golden brown and the filling is bubbling.
Allow the pie to cool for a couple of hours before serving, as this will help the filling set.
