Lemon Herb Grilled Chicken with Summer Vegetables

By the time late July arrives, I’ve usually reached my limit with heavy meals.

The casseroles that sounded comforting back in January suddenly feel overwhelming. Even some of my favorite comfort foods lose their appeal when it’s ninety-five degrees outside and the humidity makes stepping onto the porch feel like walking into a sauna.

This is the time of year when I start craving simpler meals. Fresh vegetables. Grilled foods. Recipes that don’t require turning the kitchen into an oven. The kind of dinners that feel satisfying without leaving everyone ready for a nap afterward.

That’s one reason I love this Lemon Herb Grilled Chicken with Summer Vegetables.

It’s simple, colorful, and full of the flavors that make summer cooking so enjoyable. The chicken gets a bright, fresh flavor from lemon and herbs, while the vegetables do what summer vegetables do best—taste wonderful with very little effort.

One of the things I appreciate most about seasonal cooking is that nature tends to do the hard work for you. When tomatoes are perfectly ripe, zucchini is plentiful, and herbs are thriving in the garden, you don’t need complicated recipes. A little olive oil, a few seasonings, and some time on the grill are often enough.

Honestly, that’s my favorite kind of cooking.

This meal feels like something you’d serve after a long summer day. Maybe you’ve spent the afternoon running errands, working in the yard, or simply trying to stay cool. Dinner doesn’t need to be complicated. It just needs to bring everyone together around the table.

And if there are leftovers, they’re pretty good the next day too.

Lemon Herb Grilled Chicken with Summer Vegetables

Ingredients

For the Chicken

  • 4 boneless, skinless chicken breasts
  • 3 tablespoons olive oil
  • Juice of 2 lemons
  • 1 tablespoon lemon zest
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper

For the Vegetables

  • 2 zucchini, sliced
  • 2 yellow squash, sliced
  • 1 pint cherry tomatoes
  • 1 red bell pepper, cut into chunks
  • 1 red onion, cut into wedges
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

In a large bowl, whisk together the olive oil, lemon juice, lemon zest, garlic, oregano, thyme, salt, and pepper.

Add the chicken and toss to coat. Cover and refrigerate for at least 30 minutes, or up to 4 hours.

While the chicken marinates, prepare the vegetables. Place the zucchini, squash, tomatoes, bell pepper, and onion in a large bowl. Drizzle with olive oil and season with Italian seasoning, salt, and pepper. Toss until evenly coated.

Preheat your grill to medium-high heat.

Grill the chicken for approximately 6 to 8 minutes per side, or until the internal temperature reaches 165°F.

At the same time, place the vegetables in a grill basket or on skewers and grill until tender and lightly charred, about 8 to 10 minutes.

Transfer everything to a serving platter and garnish with fresh parsley or additional lemon slices if desired.

Serve immediately.


Why Summer Meals Taste Better

I don’t know if it’s the fresh ingredients, the longer evenings, or simply the fact that everyone seems a little more relaxed this time of year, but summer meals have always felt different to me.

Some of my favorite memories involve simple dinners shared with family while the sun was still hanging low in the sky. Nobody was in a hurry. Conversations wandered from one topic to another. The food didn’t have to be fancy because the company was what mattered most.

The older I get, the more I appreciate those kinds of meals.

Not because they’re perfect, but because they’re real.

A plate of grilled chicken, fresh vegetables, and people you care about sitting around the table may not seem remarkable in the moment. Years later, though, those are often the evenings we remember.

And honestly, I think that’s what summer cooking is really about.

Not impressing anyone.

Just gathering together and enjoying the season while it’s here.
