It is the season for all things pumpkin. I admit that I am not a huge pumpkin fan and I realize that might get me killed off. Sorry! I don’t know why but for some reason it is just not for me. That being said I have no problem with using it to make some of the most wonderful treats. After all, everyone else in my home loves it.

So why not combine the flavor of the season with my love of donuts? These turned out much better than I thought they would if I am being honest. The seniors loved them. I love that they are cake donuts. For some reason as I have gotten older I prefer the cake donuts over the fried ones. Unless you’re talking Krispy Kreme and then all bets are off!

Pumpkin Donuts

Ingredients

  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 1/2 cups sugar
  • 1 1/2 cups pumpkin purée
  • 1 1/2 teaspoon pumpkin pie spice
  • 1 1/2 teaspoon salt
  • 1 1/2 teaspoon baking powder
  • 1 3/4 cups all purpose flour PLUS 2 tablespoons
  • 3 tablespoons cinnamon sugar for coating

Instructions

  • Preheat the oven to 350°F. Lightly grease two standard donut pans
  • Beat together the oil, eggs, sugar, pumpkin, spices, salt, and baking powder until smooth.
  • Add flour, stirring just until smooth.
  • Fill pans 3/4 full
  • Bake 15 to 18 minutes, or until a cake tester inserted into the center of one comes out clean.
  • Remove from oven and wait 5 minutes then loosen from edges. Remove from pans and let cool on rack.
  • While donuts are warm (but not fragile), gently shake them in a bag with the cinnamon sugar.

Notes

If you don’t have any pumpkin pie spice or can’t find it you can use:
  • 3/4 teaspoon cinnamon plus heaping 1/4 teaspoon each nutmeg and ginger
