Creamy Garlic Parmesan Chicken & Rice Skillet

There are some nights when I enjoy spending a couple of hours in the kitchen. I’ll put on a little music, take my time chopping vegetables, and before I know it I’ve made enough food to feed twice as many people as I planned.

Then there are the other nights.

You know the ones I’m talking about.

You’ve been busy all day, somebody asks what’s for supper before you’ve even had time to think about it, and the last thing you want to do is dirty every pot and pan in the kitchen.

Those are the nights when one-pan meals become my best friend.

I’ve always appreciated recipes that don’t require a sink full of dishes afterward. It’s not that I mind cooking. I actually enjoy it. It’s the cleanup that starts losing its appeal after about the third pot.

Maybe that’s why skillet meals have earned a permanent place in my recipe collection. Everything cooks together, the flavors have time to mingle, and somehow dinner feels a little cozier when it all comes from one pan.

This Creamy Garlic Parmesan Chicken & Rice Skillet is one of those meals that tastes like you spent far more time making it than you actually did. The chicken stays tender, the rice cooks right in the same skillet, and the creamy Parmesan sauce ties everything together without feeling overly heavy.

It’s also one of those recipes that makes the house smell wonderful.

There is something about garlic cooking in butter that immediately makes people wander into the kitchen asking what you’re making. It never fails. Someone will walk by, stop for a second, and say, “That smells good.”

I always laugh because I know exactly what’s about to happen next.

“How much longer until supper?”

It doesn’t matter if dinner is ten minutes away or forty-five. Once the garlic starts cooking, everyone suddenly becomes interested in the menu.

One thing I’ve learned over the years is that comfort food doesn’t have to be complicated. Some of the meals my family requests over and over again are the simplest ones. Good chicken, creamy rice, plenty of garlic, a little Parmesan cheese, and a few seasonings are sometimes all you need.

I also like recipes that don’t leave me scrambling for ingredients I only use once every five years. If I have to buy a specialty ingredient that costs twelve dollars and then sits in the pantry until it expires, chances are I’m not making that recipe very often.

Most of the ingredients for this meal are things I usually have on hand anyway. Chicken is almost always in the freezer, Parmesan is one of those cheeses I try to keep in the refrigerator, and I don’t think I’ve ever run out of garlic. Around here, garlic has a habit of finding its way into just about everything.

Another thing I appreciate about this recipe is how easy it is to make your own. If I have mushrooms that need to be used, they go in the skillet. Spinach? Toss it in during the last few minutes. Broccoli, peas, or even a handful of sun-dried tomatoes all work beautifully.

Recipes like this aren’t meant to be stressful.

They’re meant to make dinner easier.

Those are the recipes I come back to again and again.

I also think meals like this encourage everyone to slow down for just a little while. When something warm and homemade is sitting in the middle of the table, people tend to linger a bit longer. Somebody reaches for another spoonful, someone else tells a story about their day, and before long dinner lasts a little longer than anyone expected.

Those are the evenings I remember.

Not because the recipe was fancy.

Because we were all together.

That’s one of the reasons I still enjoy cooking after all these years. It isn’t really about the food.

It’s about creating a reason for everyone to gather in the same place for a little while.

If a creamy skillet full of chicken and rice helps make that happen, I’d call that a pretty successful dinner.

Creamy Garlic Parmesan Chicken & Rice Skillet

Ingredients

  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1½ pounds boneless, skinless chicken breasts, cut into bite-sized pieces
  • Salt and black pepper, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 4 cloves garlic, minced
  • 1 cup long-grain white rice, uncooked
  • 2½ cups chicken broth
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • 2 tablespoons chopped fresh parsley
  • Optional: 1 cup fresh spinach or steamed broccoli

Instructions

Heat the olive oil and butter in a large skillet over medium-high heat.

Season the chicken with salt, pepper, garlic powder, onion powder, and paprika. Add it to the skillet and cook for about 6 to 8 minutes, stirring occasionally, until the chicken is lightly browned and cooked through. Transfer the chicken to a plate and set it aside.

Reduce the heat to medium. Add the minced garlic to the skillet and cook for about 30 seconds, just until fragrant.

Stir in the uncooked rice and let it toast for about a minute while stirring frequently.

Pour in the chicken broth, heavy cream, and Italian seasoning. Stir everything together, scraping up any browned bits from the bottom of the skillet.

Bring the mixture to a gentle boil, then reduce the heat to low. Cover and cook for about 18 to 20 minutes, or until the rice is tender and most of the liquid has been absorbed.

Return the chicken to the skillet and stir in the Parmesan cheese until it melts into the sauce. If you’re adding spinach, stir it in now and let it wilt for a minute or two.

Taste and adjust the seasoning with additional salt and pepper if needed.

Sprinkle with fresh parsley before serving.

Serving Suggestions

Serve with:

  • Warm garlic bread
  • A crisp green salad
  • Roasted green beans
  • Steamed asparagus
  • Fresh fruit for dessert

This recipe serves 4 to 6 people, making it perfect for a family dinner or for enjoying leftovers the next day. In fact, I think it tastes even better after the flavors have had a chance to come together overnight.
