They are simple, filling, slightly sweet, and easy to grab when you need something quick between meals. And honestly, anything involving oats, chocolate, and coconut already has my attention.

No-Bake Oat & Date Energy Bites
Ingredients
- 1 ½ cups old-fashioned rolled oats
- ½ cup natural peanut butter or almond butter
- ⅓ cup honey or maple syrup
- ½ cup chopped Medjool dates
- ¼ cup mini chocolate chips or cacao nibs
- ¼ cup shredded coconut
- 2 tablespoons chia seeds or flaxseed
- 1 teaspoon vanilla extract
- Pinch of salt
Optional additions
- Chopped pecans or walnuts
- Cinnamon
- Dried cranberries
- Hemp hearts
Instructions
In a large mixing bowl, combine the oats, chopped dates, chocolate chips, coconut, chia seeds, and salt.
Add the peanut butter, honey, and vanilla extract. Stir everything together until fully combined. The mixture should feel sticky enough to hold together when pressed between your hands. If it feels too dry, add a little more nut butter or honey.
Using a spoon or cookie scoop, roll the mixture into small bite-sized balls.
Place the bites on a parchment-lined tray or plate and refrigerate for at least 30 minutes to firm up.
Store in an airtight container in the refrigerator for up to one week.
Perfect for Busy Days
These energy bites are exactly the kind of thing I love having around during summer. They work for quick breakfasts, afternoon snacks, or those moments when everybody suddenly starts wandering into the kitchen saying they are hungry but nobody wants an actual meal.
